Born and bred in George Town, Malaysia, Chef Jim Yong is fondly known in the industry as Uncle Jim. Specialising in Malaysian Nyonya cuisine, Jim Yong spent many years perfecting authentic Nyonya cooking techniques working with Nyonya communities in Penang and Melaka. He has accumulated over 30 years’ experience cooking in both Malaysia and Australia, as owner and head chef of Mosman’s popular eatery Uncle Jim’s Malaysian Restaurant.
